Dang Queso-dillas


I have discovered a new love: tomato-less salsa. My MIL picked some up for me at Trader Joe's this past week. I usually don't mind salsa, I just leave the nasty chunks of tomato in the jar, when possible, and soak my chip in the juice... but she knows how much I hate tomatoes and thought I'd like this.... and... yep! Very much so.

So as an ultra easy, toddler friendly lunch I created this concoction for Penny, Alan and I. I used gluten free rice tortillas (also from Trader Joe's) and fried them up with shredded cheese and small chunks of tofu and cilantro and topped them off with some of the tomato-less salsa. YUMMMMM!

The rice tortillas are nice and crisp and, combined with the salsa, have a sweet taste. This just may be our new house favorite :)
